These hams are obtained from the most select Iberian pigs that have been free-ranging from October until February, enjoying all the acorns, shoots and autumn fruits that nature can offer.
What makes this gourmet product one of the most desired in the world is the knowledge and experience that has been put into the making. The hams are cured a minimum of 36 months.
PACKAGING
This product gets wrapped in greaseproof paper and then inserted into a cotton bag which is then placed inside a special box designed for our hams.
STORAGE AND CONSUMPTION SUGGESTIONS
These products do not need any special storage to be kept perfectly. They can be maintained at room temperature.
Once you have started to slice your ham, you should consume it within six weeks. It is advisable to place some of the fat trimmed off of the leg itself onto the exposed meat so as to inhibit the loss of any aroma or flavor.
It is recommended that the product be consumed within six months of receiving it.

Although it should be noted that jamones are prized both for their smooth texture and rich, savory taste. A good ibérico ham has regular flecks of intramuscular fat (marbling). Because of the pig's diet of acorns, much of the fat is oleic acid, a monounsaturated fatty acid that has been shown to lower LDL cholestrol and raise HDL cholesterol. Having said that, San Jamón will not provide refunds for ham with perceived excess fat.
